We’ve all got a favourite soup to have during the colder season. Perhaps it’s a good time to switch things up and try something new! Enjoy this delicious and nourishing carrot, red lentil and yogurt soup packed full of vitamins and minerals. A hearty soup is always a good idea, especially on a colder day. This recipe is easy to recreate and doesn’t require hard-to-find ingredients. This soup pairs well with slices of sourdough or even ciabatta. Method

STEP 1
Heat oil a large saucepan over medium heat. Add onion, garlic and coriander and cook for 3 minutes or until just soft. Add carrots, lentils and stock and bring to the boil.


STEP 2

Reduce heat to medium-low and simmer, uncovered, for 25-30 minutes or until carrot is soft. Process soup with a stab blender or blender until smooth. Season to taste and stir in the yogurt.


STEP 3

Ladle soup into serving bowls and top with an extra dollop of yogurt.
