800g boneless shoulder or leg of lamb, trimmed of fat and cut into 4cm cubes
Marinade:
1 tbsp dried oregano leaves
1 tbsp chopped parsley
1 tsp smoked paprika
2 cloves garlic, finely chopped
freshly ground black pepper & salt, to taste
60ml extra virgin olive oil
zest and juice of 1 lemon
Greek Style Yogurt Sauce:
11⁄2 cups FARMERS UNION Greek Style Yogurt
1 large clove garlic, crushed
juice of 1⁄2 lemon
1 Lebanese cucumber, grated, then squeezed in a tea towel to remove water
1 tsp chopped mint leaves
Red Onion Pickle:
1 red onion, thinly sliced
1 tbsp red wine vinegar
Pita Bread:
350g SR flour
pinch salt, to taste
300g FARMERS UNION Greek Style Yogurt
60g butter + dash olive oil, for cooking
To Serve:
1 cos lettuce, leaves washed & trimmed
2 tomatoes, sliced
1 lemon, cut into wedges
Method
Step 1
Combine marinade ingredients together in shallow ceramic baking dish. Thread lamb onto metal skewers and place in marinade turning skewers to coat well. Cover with plastic wrap and refrigerate for 4 hours or overnight if possible, turning skewers from time-to-time.
Step 2
Prepare Greek Style Yogurt Sauce. Mix ingredients in a small bowl and season to taste with salt. Refrigerate until ready to use. Prepare Red Onion Pickle.Toss onion in a small bowl with the vinegar and set aside.
Step 3
Prepare pita breads. Place flour and salt in a large mixing bowl. Add FARMERS
UNION Greek Style Yogurt and mix well. Using your hands knead lightly into a smooth dough. Divide dough into 100g balls. Rest for 5 minutes then roll each ball into thin rounds approximately 16cm in diameter. Set aside. Heat a small amount of butter with a dash of oil in a frying pan over medium-high heat. Cook pita breads for approximately 3 minutes each side or until golden brown then set aside until ready to use.
Step 4
Cook lamb skewers on a hot BBQ grill plate with a little olive oil for approximately 2-3 minutes on all sides until lamb is cooked to liking. To assemble souvas smear a spoonful of Greek Style Yogurt Sauce along the centre of each pita bread and top with lettuce, slices of tomatoes, a lamb skewer, a little pickled red onion and a spoonful of Greek Style Yogurt sauce.
