1 cup Farmers Union Light Greek Style Natural Yogurt
¼ cup chopped fresh dill
1 teaspoon salt
1 spring onion, finely sliced
100g baby spinach leaves
2 teaspoons baby capers
200g smoked salmon, torn into pieces
extra dill, for garnish
freshly ground black pepper, to taste
Substitute rocket leaves for the spinach.Smoked chicken, canned salmon or tuna may be substituted for the smoked salmon.this pasta may be served warm or at room temperature as a pasta salad.
Method
STEP 1
Cook the pasta in a pot of salted boiling water until al dente. Meanwhile, mash half the avocado and combine with Farmers Union Light Greek Style Natural Yogurt, dill and salt. Dice the remaining avocado.
STEP 2
When cooked, drain the pasta and return the hot pasta to the pot. Stir in spring onion and spinach, cover and allow spinach to wilt, stirring occasionally.
STEP 3
Mix in avocado yogurt and capers and portion into serving bowls. Top with diced avocado and smoked salmon. Garnish with extra dill and serve sprinkled with pepper.
