200g grated orange sweet potato (kumera) or pumpkin
1 spring onion, chopped
1 teaspoon ground cumin
¼ cup self-raising flour
1 teaspoon salt
freshly ground black pepper, to taste
2 eggs
olive oil, for frying
1 cup Farmers Union Greek Style Natural Yogurt
½ cup finely chopped coriander leaves
extra coriander, for garnish
This recipe is perfect if you’re after a quick, easy and flavourful snack. You probably even have the ingredients in your fridge and pantry! It’s so simple that even the kids would enjoy lending a helping hand. Enjoy these crispy treats with a little dollop of Farmers Union Greek Style Yogurt topped with some coriander. If you like it a little spicy, feel free to sprinkle some cayenne pepper to the mix!

Method
STEP 1
Combine sweet potato, spring onion, cumin, flour, salt, pepper and eggs together.
STEP 2
Shallow fry small spoonfuls of mixture in hot oil for 2 minutes on each side until golden. Drain on absorbent paper.
STEP 3
Meanwhile, combine Farmers Union Greek Style Natural Yogurt with coriander and season to taste. Serve fritters dolloped with Coriander Yogurt.
