This quick & easy version of Tzatziki doesn’t require hanging yogurt or salting cucumbers.Just a quick cheats version. Put all ingredients together in a bowl & stir to combine. Ready to eat in 5 minutes.
Method
STEP 1
Slice the cucumber in half lengthways, using a teaspoon scrape out the seeds. Grate cucumber.
STEP 2
Peel and finely grate or crush the garlic.
STEP 3
Combine in a bowl the Yogurt, fold through the grates cucumber, garlic, chopped dill & mint. Along with the zest & a generous squeeze of lemon juice. Season with salt and pepper to taste.
STEP 4
To Garnish: Drizzle with extra virgin olive oil & sprinkle with extra dill & mint sprigs. Or pine nuts & cracked pepper
